The beginnings

It is evident that Albert was not born taught. At the age of 18, he opened a restaurant for the first time and, in his own words, "it wasn't bad, setting up a restaurant with no experience and no kind of knowledge is complicated... it was much better than we expected, but, of course, we lacked all the knowledge in the world." That restaurant was operational for four summers. Located on the Costa Daurada, in Tarragona, it offered "what little we knew how to cook and what we had learned from my two grandmothers". Already at that time, although the dishes were simple, they showed some features of what later became Albert's kitchen.
